Our Story
Coqui had the idea of running a food truck for over a decade and that idea has been whole-heartedly supported by anyone who has tried her food before. As she started the process, her son Marco took interest and she found a pretty ideal business partner right then. When scheming up what Monolo would be, Coqui and Marco quickly agreed on a few things:
It would be affordable.
It would be healthy.
It would be as sustainably sourced and produced as possible.
As the saying goes, “you are what you eat” and if you’re eating good food, well, you do the math.
